Do you hate Cauliflower? I bet this recipe will change your mind! I thought I hated cauliflower too until I tried this knock off of Season 52’s Roasted Cauliflower Appetizer.

We were at a business dinner after a day of Author Visits at local Elementary schools when I had this appetizer the first time. We asked our waiter if we could get the recipe. He was kind enough to share how he made it at home. This is my version of Roasted Cauliflower recipe.

How Do You Make It Taste Good At Home?

My version uses shredded Swiss cheese and No Salt butter. Swiss cheese is the lowest sodium cheese I can find and we use it often. I often make this on the grill, but it is equally as good in the oven. Another key to keeping this lower in sodium is McCormicks Garlic Herb Seasoning.

Step-by-Step Directions

Preparation

Start by rinsing whole head of cauliflower and pat dry. Rub with olive oil and place in a cast iron skillet. While the cauliflower is cooking melt a stick of unsalted butter. Once it is melted add the garlic herb seasoning. Prepare shredded cheese.

Cooking

Cover with foil and seal tight around the edges. Place in the center of a preheated grill or in the oven at 400 degrees. Cook covered until fork tender about 30 – 40 minutes.

Finishing Touches

Remove the foil and pour the butter herb mixture of the top of the roasted cauliflower. Then sprinkle with shredded cheese. Roast a bit longer until the cheese is melted and golden brown. To serve the cauliflower slice into wedges .

If You’re In A Hurry!

Cut the Cauliflower into bite size pieces and spread evenly on a cookie sheet, toss with Olive Oil and cover with Foil. Then bake at 375 degrees until fork tender about and then follow the steps below adding the melted butter and swiss cheese. It is a great side dish with your favorite protein. My favorite is fall off the bone BBQ’d Ribs.

Equipment

Ingredients
  

  • 1 head cauliflower
  • 4 tbsp unsalted butter melted
  • 2 tbsp Garlic Herb seasoning no salt
  • 2 tbsp olive oil
  • 1/4 cup swiss chees shredded

Instructions
 

  • preheat grill to 350 degrees
  • clean leaves from cauliflower head
  • place caulifower in the cast iron skillet and rub olive oil all over
  • cover with foil and seal tightly
  • bake for 1 hour
  • check to make sure cauliflower is fork tender
  • Melt butter and add seasoning
  • brush over the cauliflower and then sprinkle chees over the top
  • grill for another 5 – 10 min until cheese is melted and starting to brown

Please make sure all ingredients are prepped and ready to go – except the butter we will melt that during our time together.
